Jeanette is a New Jersy local Baker/Caketress currently working at Erie coffeeshop and Bakery in Rutherford. She is a beautiful person inside and out who makes beautiful desserts.

I often find in baking there is a compromise between aesthetic and flavor, meaning when there is an emphasis on aesthetic it often lacks flavor. This couldn't be further from the truth in Jeanette's case.

Her cakes always look amazing and they taste even better, her pallet and ability to combine flavors is fantastic!

1) How did you end up making a career out of baking?

So i ended up making a career out of baking by taking a chance on something i had an interest in and running with it truly. i took a chance on culinary school when i was 20 by begging my parents to let me drop out of William Paterson lol. they begrudgingly agreed on the off chance that they could see how miserable i was in the "college" setting. i went to the institute of culinary education on Saturday/Sundays from 9-5 and worked at a toy store during the week.

I was honestly not that good in culinary school. Burned caramel almost all the time, put chocolate on my Croquembouche (a high pastry offense) and actually scratched my cornea with sugar one day LOL!  I knew i wasn't great at it but i still loved it.

I wanted to be better, and I actually cared about it. The true science of it all made my brain turn and the creativity aspect of it actually gave me a voice, something I felt I never had before. It took me a while to find my medium (cakes) and what I wanted to say truly and when you work in pastry you know that you are a forever student. But truthfully I never knew I could achieve so much by just..keeping at it. Working in pastry still inspires me.

2) What's the best dessert to eat but the worst to make?
Okay funny question that i'm sure the answer is different depending on who you ASK. I think the best dessert to eat that is the "worst" to make and by worst i'm going to say the amount of work that goes into it that people have no idea about is croissants in my opinion!!! I wish everyone in the world knew what goes into laminating doughs and making a single perfect croissant.
Pastry & baking is obviously super trending over the last x amount of years so honestly maybe most people DO know what it's like to laminate dough but i guarantee if you put a video in front of someone else beating a block of butter with a rolling pin to shove in a dough they would have no idea whats going on. Or that that's just the tip of the iceberg. Either way nothing makes you believe in the pastry gods more than a delicious croissant so hmph.
3) What did Fondant ever do to you?
HAHAHAHAHAA I hate fondant so much because it tastes like poo poo. I think it is outdated as FUUUUUUUUUUUDGE. (I wont curse on your blog John) I think making a cake look as crispy and clean with buttercream takes so much more skill than laying a slab of fondant over a cake. Honestly I think it takes away from all the beautiful work that goes into building a cake. Why put a gross fondant blanket over your hard work? I don't know, it always put me off. Even in culinary school. I mostly just think of it as played out haha!
4) Do you think the hot guy from Mean Girls deserves to be the host of cakes wars or should we think of someone else? If so who?
I don't think the hot guy from mean girls deserves much honestly. He already got to be AARON SAMUELS. If anyone from mean girls should be the host it should be Daniel Franzese. Final answer.

  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1/2 cup sugar
  • pinch of salt
  • 3 egg yolks
  • 1/4 tsp vanilla extract
  • 2 shots of espresso
  • makes one pint of ice cream :)
